Last year, only one of my elderberry (Sambucus) shrubs flowered and those few flowers got eaten by critters😔.

Nature really outdid itself this year though! All of my elderberry shrubs and cuttings are thriving. The plants have tons of blooms AND I got my first elderberry harvest🤗

Elderberries are high in vitamin C, dietary fiber, and antioxidants. They’re known to boost the immune system, reduce inflammation, and promote heart health.

I was excited to turn my harvest into elderberry syrup that I’ll keep refrigerated until I might need it as a natural wellness aid this cold season. Bonus: I used the elderberry syrup “waste” to make myself a yummy elderberry cake. I finished the cake with a lemon mint glaze made using freshly harvested lemon balm and peppermint.

Mmm…farm to table at its finest😋!
