DIGGING FOR SUNCHOKES

This season, I was saddened by the loss of the natural privacy screen on our auxillary farm lot, but excited to see what our sunchokes root crop looked like.

These fallen and dried sunchokes stalks meant the crop was ready for harvest.
We dug around the base of each stalk to harvest the edible tubers.
This was actually a really fun harvest for us!
We harvested 3/4 of the bed and ended up with nearly 10 gallons of sunchokes!
We left some rhizomes in the ground to grow for next year and mulched the harvested area with the dried sunchokes stalks.

I’d say our first sunchokes harvest on the farm was a success and we’re looking forward to the delicious meals ahead😋.
