In late spring, I bought three organic sweet potatoes from the grocery store. Despite getting a late start, I was intent on trying to grow some for us.

I used two different methods – soil and water – to grow sweet potato slips for future planting.

To my surprise, the slips started growing quickly and in abundance. I planted them in our new raised beds and watched them TAKE OFF climbing all over our salvaged, self-built greenhouse.

Our sweet potato vines started dying back with the cold weather, so that meant it was time for us to harvest.

We had too much fun digging for potatoes! And, we couldn’t believe how many sweet potatoes we were able to grow from three store-bought potatoes.

Next year, I’m gonna start growing our sweet potato slips in the spring so we can get them in the ground earlier and hopefully have lots more sweet potatoes for harvest!
